I love biscotti, but I think you have already guessed that. I call my baby “my little biscotti” and he smiles back at me, full of joy, making cute little faces and I just melt… So, I decided to make Biscotti.
Classic, almond biscotti, with a pinch of salt. You could call it “SaltyBiscotti”. 🙂
We loved it. The smell of that bake, was full of warmth and sugar. I am making them again this weekend.
You will need:
100 gr. flour
70 gr. caster sugar
60 gr. almonds (whole)
15 gr. grounded almonds
3 gr. vanilla
1/2 teaspoon baking powder
1 egg (medium to large)
a pinch of salt
* Pre heat the oven to 170*C and place a baking paper on a pan.
Sift the flour, the baking powder and the salt in a bowl and add the sugar and almonds, both whole and ground ones. Mix them well and add the egg and the vanilla. Use your hands to create a smooth dough. Place some flour on a surface, shape the dough to a roller of about 28 cm. and when ready, put it on the baking paper. Bake the dough in the middle rack of the oven, for 30 minutes and after that let it on a cooling tray for about 15 minutes to cool down and be able to cut it.
Use a serrated knife and cut the dough into diagonal pieces of about 1cm wide each. Reduce the temperature of the oven to 150*C and place the biscotti back to the baking paper. Bake for 30 more minutes, until golden. When ready, transfer the biscotti to a cooling tray and serve it with some hot coffee.
