Vasilopita Cake

This is the second Vasilopita I am baking this year. And it is tastier than the first one, cause we can simply enjoy it for breakfast too. It goes perfect with coffee or milk.

We make it for ages at home and it is the only Vasilopita Cake we accept to cut in New Year`s Eve. No other recipe has any luck around here.

I just love it, it is so light and sweet and the soft orange sence completes it so well. Plus, it is such an easy recipe and very very quick to prepare. I hope you decide to give this Vasilopita Cake a go and let me know in the comments area below.


You Will Need: 

6 eggs (separate the crocus from the white wheat & prepare a meringue)

450 gr. sugar

200 gr. butter

1/2 a small glass of wine cognac

zest from two oranges

the juice from an orange (you can add two if you like the taste)

500 gr. self-raising flour

half a tsp. baking powder

powdered sugar & decorating toppings

* Pre-heat the oven to 180 *C and prepare a pan with butter and flour, so your mixture wont stick to it.

Beat in a mixer the sugar with the crocus for a couple of minutes and add gradually the butter. Keep beating and add the orange zest and the meringue. After a minute add the cognac, a few spoons of the flour and the orange juice. Add the rest of the flour and finally the baking powder.

When the ingredients are homogenized in a single mix, pour it into the pan you have ready and bake the cake in the preheated oven for about 40 to 45 minutes, depending on the oven. Make sure you check if it is baked as soon as it starts to smell wonderfully or at about 35 minutes, by sinking into the center a knife, which has to be dry when you take it out. 

Let it cool on a rack for a few minutes, add the powdered sugar and any other topping you wish.
