I guess this is a proper way to start your Monday morning. Eggs & a salty, rosemary homemade pizza-bread. A few cherry tomatoes and good hot coffee. I am pretty sure I have written it already, but I need to say it again; I love breakfasts and brunch and I wouldn`t mind enjoying such a dish as a dinner. More on that, as much as eating them, I enjoy photographing them, but you probably have already guessed that.
Pretty easy this one, You will need:
a few cherry tomatoes
some rosemary leaves
-for about 300 gr. pizza bread,
230 gr. all-purpose flour,
1 tsp salt
8 gr. dry yeast (if you want it thin crusted, otherwise, use 14 gr.)
a cup of tea with warm water
* Pre heat the oven to 180 *C. In a bowl, mix the warm water with the yeast, until it is melted. In another bowl sift the flour and the salt and add the water with the yeast. Knead until the dough is ready. Now, put it in a bowl, cover it with a towel and let is rest for 1 to 1 & 1/2 hours. Knead some more, and let it cool for another half an hour.
Shape the dough as you wish, spread some salt, olive oil and a few rosemary leaves and bake for 20 – 30 minutes, until is ready.
Prepare the eggs as you prefer, add some cherry tomatoes and enjoy your breakfast!!
