Crispy Lemon & Rosemary Oven Baked Potatoes

If you visit our home on a Sunday, any Sunday, you will find on our table a Greek salad with feta and crispy oven baked potatoes. I usually add some rosemary and lots of lemon juice. Its a pretty simple dish, that goes perfect with any roasted meat. I also add a lot of good quality olive oil and try to bake it as slow as possible.

You Will Need:


lemon juice

olive oil

warm water

salt & pepper

rosemary leaves

* Place the chopped potatoes in a pan, add enough olive oil to cover the surface, add some salt and pepper and add lemon juice from at least one lemon. Cover the potatoes with warm water and bake until golden. When ready, sprinkle some rosemary leaves on top and serve while hot.
