Scrambled eggs, with salmon and avocado on toast for today and I am so exchited for this breakfast. It tastes amazingly and it only took me 15 minutes to prepare it.
I love eggs and since my time is very limited lately, I find this recipe extremely appropriate for my new schedule. Things at home are a little crazy regarding our daily routine, so I heading more and more towards easy cooking that tastes great.
You Will Need (for 2):
2 slices of bread
for the eggs:
75 gr. sour cream
1 t.b butter
salt & pepper
* Prepare the scrambled eggs by adding the sour cream in low to medium heat in a frying pan and crack the eggs in a bowl. Add some salt and pepper. As soon as the sour cream starts making blisters, add the eggs and continuously mix until they are homogenised. Just before you think the eggs are ready, (all white and creamy) take them out of the heat and add the butter. Keep mixing well for two minutes and add them on top of the bread.
Add some salmon and avocado slices and spread some pepper on top.
