If these fried little breads with feta and honey, are something new to you and you have never tried them before, I recommend you do it the soonest you can. The breads photographed here are the second portion I baked in two days. As you can imagine the first one did not last more than an hour.
They are seriously delicious and a memory of my grandmother, who baked them to us from time to time, to add that something extra into our breakfast. I love all kind of bread tastes, but that easy recipe of just 4 ingredients, is very special to me. Greek cuisine, is not just about mousaka and Greek salad, but is also full of fantastic and many kind of breads and pies.
Lets start with the simplest one.
You will need:
450 gr. all purpose flour
230 gr. water
1 tsp salt
300 gr. feta, crushed into small pieces
oil for frying
honey and extra feta for serving
* Sift the flour into a large bowl. Create a hole in the middle and add the water and the salt. Κnead the dough with your hands for about 5 minutes, until it is homogenised. Cover it with a plastic wrap and let it rest in room temperature for at least an hour.
Put in your hands with some olive oil and divide the dough into 8 little pieces, or six if you want the bread pies larger. Shape each piece into a circle and spread some olive oil. Add feta and fold the dough circularly in such way to create a cylinder. Press it again with your hands to make it as thin as possible. Repeat for all of the bread pies.
Put lots of oil into a pan, in high heat and as soon as it is hot enough, place each bread pie and let it fry both sides, until it is golden. Place them on paper towel to remove extra oil, add some feta on top and honey and serve.
