Αυτή η συνταγή με τα τυροψωμάκια φέτας και δυόσμου είναι από τις αγαπημένες όλων εδώ στο σπιτικό μας. Πρόκειται για μια πολύ εύκολη, νόστιμη συνταγή, που πιστεύω ότι ταιριάζει απόλυτα με την καλοκαιρινή περίοδο που διανύουμε, γιατί είναι ένα σνακ που παίρνεις μαζί σου εύκολα, παντού. Ο συνδυασμός των γεύσεων ναι μεν απλός αλλά με αποτέλεσμα που δεν χάνει. Σπιτικό ψωμάκι με φέτα, γαρνιρισμένο με δυόσμο ή ρίγανη.

Ήρθε η εποχή που θα πάμε πάλι στο χωριό μας. Που θα φτιάχνουμε πρωινό για όλη την οικογένεια και θα έχουμε τον χρόνο να το απολαύσουμε όλοι μαζί, παρέα, στη βεράντα μας, χωρίς βιασύνη και άγχος. Ήρθε η εποχή που θα θυμηθώ τα δικά μου παιδικά χρόνια στο χωριό, με παρόμοιες στιγμές στο πρωινό τραπέζι και τη γιαγιά μου να μας φτιάχνει τηγανόψωμα με φέτα και μέλι.

French Toast With Extra Crispy Bacon, Honey & Strawberries

In Greece, we call them Augofetes -actually translated, Egg Slices. My grandmother used to make them for us as a breakfast, mostly during summer. They taste great when sugar is sprickled on top and they match perfectly with feta, if you prefer a saltier taste.

Today I choose to make them with some slices of extra crispy bacon, honey and strawberries.

French Toast, with extra crispy bacon, honey and strawberries.

3 eggs,

8 bread slices, evenly cut,

100 gr. milk,

some salt & pepper,

1 tbs olive oil,

3 slices of fried bacon,

10 strawberries, sliced,

honey

* Add in a bowl the eggs, the milk, salt and pepper. Whisk until incorporated. Place the bread slices inside and let them soak the mixture.

Place the olive oil in a pan and fry the bread for 3 to 4 minutes for both sides until golden.

When cooked, transfer them to a plate linen with some paper towel to absorb the oil.

Serve with some bacon slices, strawberries and honey.

Easy Homemade Bread

Baking bread is theraputical. Is fun. It makes my kitchen feels alive. I feel alive. So, I baked two of these lovely little loaves. Some butter, honey and homemade bread is the perfect way to start your day.

Easy Homemade Bread.

400 gr. all purpose flour

8 gr. dry yeast

220 ml warm water

1 ts sugar

1 tbs salt

Add in a bowl the yeast, 100 ml of water, 3 spouns of flour and the sugar. Mix well and leave it aside for 15 minutes. Preheat the oven to 60*C for 15 minutes and turn it off.

In another bowl, add all the remaining ingredients and put inside the yeast mix. Stir well for 3 minutes until the dough is homogenised.

Place the dough in another bowl with some flour around it, cover it with a plastic membrane and put it in the oven for 20 minutes.

Preheat the oven at 180*C. Place a non-stick paper on a pan, shape your dough and bake it for 30 minutes. After that, increase the oven temperature into 200*C and bake for another 10 minutes.

A Festive Cheese Plate

The second day of the year, is the perfect day for a snack. With all the crazy amount of cooking and baking of the previous days for the festive family-meals, a cheese board and some wine is the best way to still feel the New Year`s atmosphere without spending hours in the kitchen.

So I created a very simple cheese plateau for two, from all the left overs in the fridge. We enjoyed it a lot and if you want to give it a try, here are some suggestion ingredients to use.

I put three kinds of cheeses, which were the base of the plate. A provolone dolce piece, which is an italian kind of soft aged pasta filata cheese, a piece of blue cheese and a Greek metsovone, which is a semi-hard smoked cheese, produced in the region of Metsovo. I added some prosciutto, a few salami slices, green olives, salty crackers, some breadsticks and croutons, apricot marmelade, some nuts, raisings and dried figs.

Feel free to add some fruits, fresh or dried, other kinds of marmelades or roasted bread slices and depending on the number of people, simply adjust the amount of food served in your plate.
