No Bake Vegan Chocolate Salami

Today`s recipe on “Vegan Chocolate Salami”, is part of a collaboration with the great food blogger Nicolas, the creator of “Blogtastic Food” blog and a number of other food bloggers from around the world (whose info I will gradually add-on the blog post). How exciting is that!!!

The whole concept is inspired by an amazing recipe he posted about a month ago on his blog, the “Vegan Lemon Meringue Pie” (which I will definitely make soon – husband`s request…).

The recipe of no bake Vegan Chocolate Salami I made for this collaboration, is a favorite recipe of mine but I usually make it with different ingredients. If you decide to try it, you will find it extremely quick and easy to make. It is a dessert that the longer stays in the fridge, the better it gets. We had to fight for the last pieces around here and my father in law made me promise him that I will make him another one soon.

You will need:

220 gr. vegan digestive-type biscuits

60 gr. cocoa

120 gr. powdered sugar

40 gr. peanuts

80 gr. nuts

200 gr. dark chocolate

200 gr. coconut butter into small pieces

4 tbsp almond milk

Break the biscuits into smaller pieces and mix them in a bowl with the cocoa, the sugar, the nuts and the peanuts. Melt the chocolate over a bain-marie (or carefully into the microwaves oven, by stirring every 40 sec. so it won`t get burned), add the butter and the milk and mix them well. Put the chocolate mixture into the biscuits one and mix again until it is homogenized.

On a baking sheet, place the mixture on it by using a spoon and fold it while creating a salami shape with your hands. Place on the freezer for at least three hours. I suggest to taste it the next day… 🙂

Easy Zucchini Pie -The Greek Mpatzina-

My mother`s mum was a fantastic cook. And baker. She could make us a pie in a second, always tasting delicious and full of love. This is true, I could feel all her love for us in her cooking. Even on the simplest dishes.

So, this pie, Mpatzina as we call it in Greece, brings out childhood memories and family traditions.

I believe it is the easiest pie anyone can make and a little difficult to fail in the baking. It is very thin, crunchy on the sides but so creamy on the inside, that one piece of it is never enough. My little one loves it too. I believe he loves anything involving Feta Cheese… Pure Greek!!  🙂

Mpatzina is perfect for breakfast or as an evening snack. Give it a try and let me know.

You will need the following Ingredients:

  • 2 medium zucchini, grated
  • 1 medium-sized egg
  • 5 tbs olive oil
  • 200 gr. yogurt
  • 300 gr. all-purpose flour
  • 200 gr. feta cheese, crumbled
  • 200 ml. water
  • mint
  • salt & pepper

Method:

  1. Preheat the oven to 180*C and put an empty pan inside for 10 minutes.
  2. In the meantime, prepare the pie mixture. Rub the zucchini in a grater, aim for long lined shaped, and put them in a bowl.
  3. Add the egg, the olive oil and the yogurt and mix gently with a wire.
  4. As soon as it is mixed well, add the flour and the water. It should look like batter.
  5. Through the feta pieces, some salt and pepper, add the mint and mix well with a large spoon.
  6. After the pan is well heated, use a paintbrush to cover it with a mixture of some olive oil and water and through in the pie mush. Sprinkle on top some olive oil and bake for 40 minutes in the medium rack.
  7. Leave it to cool for 10 minutes and serve.

Chocolate Brownies

Today it`s a bank holiday around here. I think there is no better opportunity for a great desert. Chocolate brownies for example.

Let me just say, that this is not just a regular sweet`s recipe. That dessert is the essence of happiness.

Even if you are not a big fun of chocolate you will ask for a second piece. At least that happened to me from a friend and it made me very happy, but then I realised I should have made two pans of the original recipe, because it disappeared in no time.

Fortunately, it is very easy and quick to prepare, so I will not spend the entire day on the kitchen. I told you that it`s a bank holiday and family walks near the beach are a must!!

I need to leave the computer now and start baking!! GIve it a try, you will love-love-love it!!

You will need the following Ingredients:

  • 180g. butter
  • 250g. dark chocolate, finely chopped
  • 40g. cocoa powder
  • 4 eggs
  • 300g. granulated sugar
  • 200g. flour
  • 100g. walnuts
  • white chocolate, melted

Method:

  1. In a bain marie, melt the butter along with the chocolate.
  2. Remove the bowl from the bain marie and beat with a hand whisk until the mixture is thoroughly combined.
  3. Add the remaining ingredients and mix with the whisk.
  4. Line a 20×30 cm baking pan with parchment paper.
  5. Grease and flour the parchment paper.
  6. Spread the mixture in the pan.
  7. Bake at 170*C  for 30-35 minutes.
  8. Remove it from oven and allow it to cool a bit.
  9. Serve at room temperature and with some white chocolate on top.

Chocolate Chip Cookies

That was super fun. The baking, the cookies, the photo shoot. What a day!!

I got inspired by the Marisa Churchill, “My Sweet & Skinny Life” book, which I got a couple of months ago. I love that book. Apart from fantastic recipes and cooking tips, is has lots of food photographs that I need to recreate.

Anyway, I think you all know it. I choose to start with the chocolate cookies recipe cause it was in the “classics” chapter and I need to be honest with you, we like cookies A LOT in this house.

You will need the following Ingredients:

  • 168 gr. flour
  • half tb salt
  • half tb baking soda
  • 84 gr. of brown butter (beurre noissette), in rooms temperature
  • 127 gr. black sugar
  • 1 egg white
  • half tb of vanilla extract
  • 110 gr. baking chocolate in drops or cut in small pieces

The Method:

  1. Heat the oven at 175°C and place the rack in the middle. Cover the base of a pan with a baking paper.
  2. Mix in a bowl the flour, the salt and the soda. Let it aside.
  3. Use a mixer to mix the butter and the sugar for two minutes, in medium heat. Add the egg and the vanilla, mixing for two more minutes. Through in the flour mixture and hit the mixer in low heat until the ingredients get one. Add the drops of chocolate and stir with a spatula.
  4. Use a large spoon, create small balls of the mixture and put them on the pan by leaving 5cm. distance between them. Press them gently with your hand to make them flat.
  5.  Bake for 6-8 minutes, until they get a golden color. Take them off the oven and place them on a rack. Leave them to cool for 15 minutes.

Chocolate Pancakes

This was made a while ago and it was my first attempt to make pancakes. For some reason It took a great effort to decide on the proper recipe and an even greater one, not to eat all the pancakes, before taking some shots. Well, I did eat many of them of course while I was cooking,  but I managed to keep a few decent ones for the pictures.

These chocolate pancakes are great for a Mother`s Day breakfast and very easy to make. The recipe is from a favorite Greek Chef of mine, Akis Petretzikis and his book “Just Chocolate“, who I think most of you don`t know, although he is very talented, famous around here and recommended by Jamie Oliver after they cooperated a couple of years ago.

Anyway, back to the delicious recipe of those chocolate pancakes.

You will need the following Ingredients:

  • 180 ml sour milk
  • 1 egg
  • 1 tb vanilla syrup
  • 40 gr. crystal sugar
  • 50 ml spore oil
  • 130 gr. flour
  • a pinch of salt
  • 1 tb bakin powder
  • 1 tb cooking soda
  • 100 gr. milk sugar
  • 50 gr. butter to fry
  • 170 gr. melted praline chocolate (to serve on top)
  • fresh fruit

Method:

  1. Whisk in a large bowl the milk with the eggs, the vanilla, the sugar and the oil.
  2. Whisk in a separate bowl the flour with the salt, the bakin powder, the soda and the chocolate pieces and fold into the flour mixture until all ingredients are combined together.
  3. In medium heat, place a nonstick pan and use half tb of butter per pancake.
  4. When the butter melts, place into the pan a large spoon of the mixture and cook for 4 minutes until it gets bubbly on top, flip and cook for 2 more minutes until it gets a golden color.
  5. Serve with melted praline on top and fresh fruit.
