Simple Chocolate Cupcakes

I should post these Chocolate cupcake photos around Valentine`s, but I was too occupied with my little son who turned two!! (I cannot believe how quickly time passes by), the difficulties of my pregnancy and my work at the office, that it was impossible for me to do anything else.

About a month later though and being away from office, my schedule starts to feel a little lighter. Being in the seventh month now, I feel that I have just a minute to cool down from my crazy daily rhythm, focus on my new baby son coming soon and perhaps find some time for myself, to be creative with my food photography and my cooking love again.

Other than that, life around Athens is the same, with the weather getting finally kinder to us and our well-known Greek sun visiting our little town again. It is so relaxing to enjoy your breakfast in the veranda without getting cold.

I guess you are pretty busy too, but find some time to try those delicious and so simple to make chocolate cupcakes. Chocolate has the power to turn your day into a great one!! No? 🙂

You Will Need:

60 gr. chocolate couverture

120 ml boiled water

40 gr. cocoa

5 gr. instant coffee

120 ml sour cream

2 eggs

1 tea-spoon vanilla sirup

150 gr. white sugar

140 gr. all-purpose flour

1/2 tea-spoon baking soda

1/4 tea-spoon salt

Pre heat the oven to 160 *C. Prepare the cupcake tray with butter and flour. Finely chop the couverture and place it on a large bowl with the warm water. Stir until it melts. Add the cocoa and the coffee and mix well.

Add the sour cream, the olive, the eggs and the vanilla and mix well. Add the sugar and mix again. Finally, add the flour, the baking soda and the salt and mix until all the ingredients are homogenized.

Divide the mixture evenly into 8 parts and fill the cupcake tray up to 2/3. Bake for 20 – 25 minutes. Allow the chocolate cupcakes to cool down for 10 minutes. Remove from the tray, allow them to further cool down for one hour and serve.

Carrot Cake

Dear friends, hello and Happy New Year!!

I hope that you are all good and had a great time during Christmas. I am back after a few months of silence, posting a Carrot-Cake recipe that I baked back in October –but still discussing about it at home.

I have some wonderful news that i wish to share with you, the reason of my absence is that I am pregnant, expecting our second baby. As you can imagine I had a really difficult first trimester. I could not eat anything, let alone to cook, taste and write about food. Anyway, I am feeling much much better these days and enjoying it a lot. I managed to deliver a 12 people dinner in New Years Eve at home and I even baked them a Vasilopita, (I am posting soon the recipe).

I wish to all of you a great 2019, health and love all around you.

Now, back to the delicious Carrot cake friends!! You must must try it!!

You will need: 

250 gr. corn oil

350 gr. brown sugar

400 gr. cleaned, finely chopped carrots

4 eggs

zest from 1 lemon & it`s lemon juice

400 gr. self-raising flour

1 tsp. baking powder

1 tsp. cinnamon

a pinch of salt

70 gr. raisin (currant)

10 apricots dried, finely chopped

50 gr. walnuts grated

You will also need -for the decoration 

Pastry Cream

500 gr. milk

a few nuts chopped

Pre-heat the oven and prepare the pan with butter and flour and chop the carrots. Sift in a bowl the flour and stir with the Baking Powder, the salt and the cinnamon. In another bowl, stir the raisins with the walnuts and the chopped apricots.

Beat in the mixer the oil with the brown sugar to soften a little and gradually add the eggs, the lemon juice and the lemon zest. With a spatula, add the grated carrots to the mixture first, then the mixture with the flour and then the mixture with the raisins.

When the ingredients are homogenized in a single mix, pour it into the pan you have prepared and bake the cake in the preheated oven for about 45-50 minutes. Check if it is baked, by sinking into the center a knife, which has to be dry when you take it out. 

Thoroughly rinse it and after 5 minutes, grind it on a grill to cool completely. Prepare the pastry cream and let it cool down in the refrigerator. When the cake is cooled, decorate the surface with the pastry cream and the chopped nuts or any other topping you wish.

Chocolate, Banana & Cinnamon Muffins

I was in the mood for muffins today. I decided to make them with chocolate, banana and cinnamon. What a better combination? I got inspired by “simply-delicious-food” but I altered it a bit, based on the ingredients I had at home. The recipe got approved by my husband and my little George, who thankfully loves my baking and kept asking for “cake mommy…“.

You will need for 12 muffins:

130 gr. butter

120 gr. sugar

75 gr. baking chocolate

2 eggs

2 bananas

2 vanilla (3 gr.)

250 gr. all-purpose flour, sieved

1 tbsp baking powder

1 tbsp baking soda

1 tbsp caster sugar

1 tbsp ground cinnamon

Pre heat your oven to 180 *C Fan and prepare the baking tray with the cupcake liners. Use an electric mixer to mix the butter with the sugar until it gets creamy. Add the eggs (one at a time) and keep mixing. Add the mashed bananas, the chopped chocolate and the vanilla and mix for a few minutes.  Finally, add the flour, the baking powder and the baking soda and mix until the ingredients are homogenized.

Put the mixture into the cupcake liners, leaving space, about a finger from above and sprinkle with the cinnamon – sugar mixture on top. Bake for 25 minutes.

Tzatziki Sauce

A really easy and quick recipe for today.

Tzatziki!!!

Yogurt, fresh herbs, cucumber and olive oil are the main ingredients to make this summery sauce.

It goes perfect with any grilled meat or vegetables, fried calamari and of course gyros if you are having souvlaki. You can serve it with pita bread and olives and perhaps a bit cold.

You will need the following Ingredients:

  • 200 gr. strained yogurt
  • 1/2 medium size cucumber, grated & stiffed
  • 1/2 a lemon, juiced
  • 2 spoons of olive oil
  • 1 tbs dill, finely chopped
  • 1 clove garlic, minced
  • salt & pepper to taste
  • olive oil to decorate
  • olives / basil leaves to decorate

Method:

  1. Prepare all the ingredients as instructed above.
  2. In a bowl, add them all, the yogurt, the cucumber, the lemon juice, the olive oil, the garlic and the dill (my recipe does not include dill today, but you should definitely add some), some salt & pepper to spice it up.
  3. Stir them well enough to combine, put it in the fridge for a while.
  4. Serve with some olive oil drops & olives on top.

Easy Zucchini Pie -The Greek Mpatzina-

My mother`s mum was a fantastic cook. And baker. She could make us a pie in a second, always tasting delicious and full of love. This is true, I could feel all her love for us in her cooking. Even on the simplest dishes.

So, this pie, Mpatzina as we call it in Greece, brings out childhood memories and family traditions.

I believe it is the easiest pie anyone can make and a little difficult to fail in the baking. It is very thin, crunchy on the sides but so creamy on the inside, that one piece of it is never enough. My little one loves it too. I believe he loves anything involving Feta Cheese… Pure Greek!!  🙂

Mpatzina is perfect for breakfast or as an evening snack. Give it a try and let me know.

You will need the following Ingredients:

  • 2 medium zucchini, grated
  • 1 medium-sized egg
  • 5 tbs olive oil
  • 200 gr. yogurt
  • 300 gr. all-purpose flour
  • 200 gr. feta cheese, crumbled
  • 200 ml. water
  • mint
  • salt & pepper

Method:

  1. Preheat the oven to 180*C and put an empty pan inside for 10 minutes.
  2. In the meantime, prepare the pie mixture. Rub the zucchini in a grater, aim for long lined shaped, and put them in a bowl.
  3. Add the egg, the olive oil and the yogurt and mix gently with a wire.
  4. As soon as it is mixed well, add the flour and the water. It should look like batter.
  5. Through the feta pieces, some salt and pepper, add the mint and mix well with a large spoon.
  6. After the pan is well heated, use a paintbrush to cover it with a mixture of some olive oil and water and through in the pie mush. Sprinkle on top some olive oil and bake for 40 minutes in the medium rack.
  7. Leave it to cool for 10 minutes and serve.

Chocolate & Banana Bread

This is not nagging, it`s just the reality.

It is Saturday morning, I have my chocolate banana bread ready, I check my photo set, I feel excited about shooting my next food project. I compose and snap, snap, snap and after a while I feel happy with what I see on my camera, so I stop.

We eat the cake inevitably –it smells great, I go to my computer, it`s time for the next blog post.

And then boom!! I see it! Little details that I`ve missed, mistakes on composition, heavy lighting and the list goes on… And that happens every time friends. I no longer have any food to photograph and no time to repeat the process.

Anyway, I have always wanted to make Banana Bread. Adding to it chocolate it only makes it better.

I found the recipe when I recently bought the “Food 52, Genius Recipes” book for my “Food Library” collection, so I gave it a try.

It was a cake that we ate in almost a day and when I say we, I mean the whole family, even my little one got exited about it. I must say though, that we found it a bit greasy, so for the next time, I decided to limit the amount of banana used, into half.

Other than that, it was a very easy “desert” and it didn`t take too much time to prepare.

If you want to give it a try, you will need the following Ingredients:

  • 250 gr. flour
  • 2 teaspoons baking powder
  • 125 gr. butter, softened
  • 235 gr. muscovado sugar
  • 400 gr. ripe bananas, peeled weight
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 100 gr. dark chocolate
  • powdered sugar, optional

Method:

  1. Preheat the oven to 180*C. Place a baking paper on a nonstick pan, appr. 24 by 12 by 8 cm.
  2. Sift the flour and the baking powder together.
  3. In a mixer, cream the butter and sugar till fluffy and pale coffee-colored.
  4. Put the bananas in a bowl and mash until lumpy, not as a purée. Add the vanilla and the chopped chocolate pieces.
  5. Beat the eggs lightly and continue to beat them to the butter mixture. Insert some flour slowly until it starts to curdle.
  6. Add the banana mixture into the flour one and insert the rest of the flour and the baking powder. Blend gently with the spatula.
  7. Put the mixture into the pan and bake for about 50 minutes. When ready, leave it to the pan for 15 minutes to cool down and lift it out of the pan with the baking paper. Optionally, serve it with some with powdered sugar.

Chocolate Brownies

Today it`s a bank holiday around here. I think there is no better opportunity for a great desert. Chocolate brownies for example.

Let me just say, that this is not just a regular sweet`s recipe. That dessert is the essence of happiness.

Even if you are not a big fun of chocolate you will ask for a second piece. At least that happened to me from a friend and it made me very happy, but then I realised I should have made two pans of the original recipe, because it disappeared in no time.

Fortunately, it is very easy and quick to prepare, so I will not spend the entire day on the kitchen. I told you that it`s a bank holiday and family walks near the beach are a must!!

I need to leave the computer now and start baking!! GIve it a try, you will love-love-love it!!

You will need the following Ingredients:

  • 180g. butter
  • 250g. dark chocolate, finely chopped
  • 40g. cocoa powder
  • 4 eggs
  • 300g. granulated sugar
  • 200g. flour
  • 100g. walnuts
  • white chocolate, melted

Method:

  1. In a bain marie, melt the butter along with the chocolate.
  2. Remove the bowl from the bain marie and beat with a hand whisk until the mixture is thoroughly combined.
  3. Add the remaining ingredients and mix with the whisk.
  4. Line a 20×30 cm baking pan with parchment paper.
  5. Grease and flour the parchment paper.
  6. Spread the mixture in the pan.
  7. Bake at 170*C  for 30-35 minutes.
  8. Remove it from oven and allow it to cool a bit.
  9. Serve at room temperature and with some white chocolate on top.
